Lisa Parkinson is a 3D Cake & Chocolate Artist, Tutor/Demonstrator, Cake Article writer, amateur Food Historian and very much a Maverick Baker. She currently lives and works on the atmospheric Romney Marsh, Kent.

Before jumping into the Culinary World, she worked in Quality Compliance for many years (Pharmaceuticals/Medical) – hardly relevant it seems except her high attention to detail combined with her background in Art and passion for baking seemed an unexpected evolution initially.

Baking for a living is the realisation of a child-hood dream – something that has driven her to use her artistic skills more broadly and undoubtedly challenge the status-quo of cake design.

Her Cake Studio is based on the beach and a National Bird Reserve where surrounded by Nature, she takes much of her inspiration from it. Her surroundings help to create her unique and individual Cake forms and Trade-Mark style…..art that not only can be admired but also consumed.

A natural born artist involved in many mediums including Sculpture, Lisa has a wealth of knowledge gleaned through art which she now successfully relays into Cake.

Totally self-taught and proud of her achievements Lisa is happy to be a source of inspiration to other would-be bakers.

Teaching has become a real passion. Lisa undertakes a variety of intimate classes in her home-studio and is currently in discussion with a number of Prestigious Kent Venues to bring classes/demonstrations to a wider audience in Kent.

Course Details

During our 1 day Introduction to Baking Basics you will be taught by Professional Baker Lisa Parkinson. If you are a novice & want to learn the basics of baking and simple decorating techniques, then this Course if perfect for you.

Understanding the do’s and dont’s of baking, importance of using quality ingredients, you will watch being prepared, mixed & baked, a selection of Sponge Cakes. Once cooled, you will get “hands-on” with a variety of sponges that Lisa has baked for you to play with!

You will be introduced to Sugar Syrups and you will learn to make your own buttercream to layer, crumb coat and cover your cake with and how to achieve a variety of buttercream finishes. To finish off the design, you will make a selection of super-easy Sugarpaste Flowers using “Push” Moulds to give your cake a Professional finish.

What you’ll learn:
1. How to prepare and bake a basic sponge recipe
2. The do’s & dont’s of baking a sponge cake
3. Tips for a successful bake every time
4. How to make the perfect buttercream
5. How to layer, fill, coat and cover your cake
6. How to decorate simply and effectively

What you’ll take home:
1. Your finished cake, boxed up ready to travel
2. Notes for future reference

MATERIALS NEEDED - The Rocpool School of Baking will supply all you need in the price quoted

1. All equipment, *materials, a cake box and an apron
2. Liquid Refreshment/biscuits/Cake

*All our cakes are made with a standard sponge recipe which contains wheat flour, eggs and butter and may contain nuts.

Lunch:
We will supply Liquid Refreshment/biscuits and of course, cake to enjoy! throughout the day. Students are advised to bring a packed lunch for when we take our lunch break and wear sensible shoes…..you will be on your feet all day!

Course Times:
Day Classes (09:30am - 17:00pm)

Occasionally, courses may run over or finish earlier than scheduled - speed of the class is determined by the skill/knowledge level of the Student(s). This can & does affect the Class duration - please be aware of this when making travel arrangements.

Refunds:
Courses take a considerable amount of time and a financial outlay to arrange - if a Student or Students fail to attend, we still have to make payment to our staff. As such, we are unable to offer a refund or transfer to an alternative date should you decide to cancel or are unable to attend your Course.

Students are advised to ensure, they have adequate Travel & Event Insurance in place prior to booking.

Cancellation of Course by us:
This is rare but occasionally, it does happen - in such circumstances, you will be offered either a full refund of your Course Cost or an alternative date.

In such circumstances, we are not responsible for losses incurred in regard to travel/accommodation or any other expenses. Students are advised to have suitable Travel Insurance in place prior to booking with us.

We are always happy to arrange a Bespoke Class for you and can accommodate a maximum of 4 Adults (sorry, no under 18’s).

A Bespoke Day Class starts from £600. Bespoke Day Classes can be on a one-to-one basis at that price or if you book 4 Adult Places, we offer a £25 per person discount.

Smoking:
Our facilities and immediate vicinity (National Bird Reserve) are strictly Non-smoking and that includes VAPS. If you are unable to refrain from smoking, please do not book with us.

Parking:
There is ample Public Car Parking situated across the road from the Baking School.

Good Weather:
We are based on the Beach and as such, when the weather is good, we like to take a stroll on the Beach simply to stretch our legs, clear our minds and to get fresh air over the lunch-break. Sensible footwear is advised simply for your own comfort and safety throughout the day. No open-toes or flip flops.

Our facilities are “Pet Free” however, we have Ducks & Chickens in the grounds of the School.

During our 1 day Introduction to Cold Porcelain Flower Class you’ll learn how to make a gorgeous, delicate Rose or Peony. These are such popular flowers for Wedding Cakes and a Classic look for any Bride.

What you’ll learn:
1. Making an intricate & botanically correct flower
2. Different ways to cut petals using either Cutters or Templates
3. How to create Wired Petals to give your flower “movement”
4. How to tape, dust and air-brush petals to create a beautiful, realistic flower
5. Hints, tips, factors & general information including wiring & attaching your flowers to cakes
6. Health & Safety

What you’ll take home:
1. Your finished flower, boxed up ready to travel
2. Notes for future reference
